Characteristics & Application: α-Cyclodextrin is a non-reducing cyclic saccharide comprised of six glucose units. The units are linked by α-1.4 glycoside bond. It is produced by the action of Cyclodextrin glucosyl transferase on hydrolysed starch syrups. The cavity of α-Cyclodextrin is less than that of β-Cyclodextrin, therefore it is used to allow formation of inclusion complexes with smaller molecules. The solubility degree of α-Cyclodextrin in water is 12.7 g/100ml at 25°C (77℉),α-Cyclodextrin is a dietary fiber that can be used as a food additive.
